Jollof rice is and shall always be an all - time favorite in most, if not every West African home and quite possibly the most famous dish West Africa.

Tired of eating jollof rice the same way, and in need of a twist to make your tastebuds explode with flavors?. This is exactly why you have us, We’ve taken the time to compile and research on 5 funky and delicious ways to enjoy your jollof rice .

 

JOLLOF RICE AND BEANS PORRIDGE RECIPE

INGREDIENTS

  • Cooking oil
  • Tomato paste/puree
  • Honey Beans
  • Diced Onions
  • Washed Rice
  • Lamb seasoning
  • Salt
  • Chicken Seasoning
  • Curry
  • White pepper
  • Ginger & Coriander powder
  • Garlic Powder
  • Water
  • Diced plantains
  • Cooked prawns
  • Sauteed Red bell peppers, Yellow bell peppers and Green bell peppers

INSTRUCTIONS

  • In a pot, start with boiling the beans, by boiling some water, then add in the beans and boil till soft. Drain excess water if any and set aside.
  • In a large sized pan, heat up some cooking oil on medium heat. Once oil is hot, fry diced onions till golden brown.
  • Add in tomato puree/paste and fry until pebbly
  • Pour in pepper mix, and stir properly, add in all spices, seasoning and salt and stir properly
  • Add in washed rice and some water, boil for 15-20 minutes.
  • Pour in cooked beans, cover with a foil paper or baking sheet and steam for 5 minutes or less.
  • Open pot and add in vegetables, cooked prawns and diced plantains.
  • Stir till all ingredients are well incorporated and serve with protein of choice and Enjoy!

GOAT MEAT JOLLOF RICE RECIPE

INGREDIENTS

INSTRUCTIONS

  • In a blender, add ripe, unripe habanero peppers, garlic, ginger, sliced onions and water, blend till smooth. Divide mixture into two equal parts. NB: this mixture elevates and boosts the flavor of your chicken
  • Blend Red and green habanero peppers and set aside
  • In a pot, add your soft chicken laps, curry, thyme, chicken seasoning, salt, add half of a set aside blended mixture. Stir properly, add in little water and allow to simmer for 15 minutes. Repeat process to boil meat
  • Once the proteins are done, set aside and keep the protein’s stock.
  • In a separate pot, heat up some cooking oil, add chopped goat meat head, sliced onions, curry, bay leaves and stir fry for 5 minutes.
  • Add tomato paste, fry for at least 6 minutes while consistently stiring. Once fried, add other half of pepper mixture, stir, cover and allow to cook for 10 minutes.
  • Once its cooked, add chicken and meat stock, seasoning cubes, chilli powder and stir, cook for 5 minutes. Taste for any taste adjustment that may be needed.
  • Add water and allow to boil over. Once its boiled, add rice, cover with a foil paper or baking sheet, cover and cook on medium to low heat for 15-20 minutes.
  • In a frying pan, add a quantity of oil perfect for frying your proteins, once hot add goat meat and fry till golden brown. Once done, fry chicken till golden brown and set aside.
  • Heat up some coconut oil, add sliced onions, add earlier blended red and green habanero pepper mixture, cover pot and allow to steam for 5 minutes
  • Add fried goat meat into mixture and allow to cook for 3-5 minutes on medium heat.
  • Add mixture to cooked jollof rice and stir till they’re well incorporated.
  • Steam for 2-3 minutes on low heat and stir again.
  • Your meal is ready!. Serve with chicken and Enjoy!

NATIVE JOLLOF RICE AND FRIED PLANTAINS

INGREDIENTS

INSTRUCTIONS

  • Cook some rice till properly done, drain excess water and set aside
  • Boil meat and cow skin with spices of choice and set aside as well.
  • In a pot, heat up some palm oil, add diced onions and locust beans and fry till slightly brown.
  • Add blended mixture, cover and cook on medium heat for 10-15 minutes
  • Once done, add salt, seasoning, crayfish and stir and add in your earlier cooked cow skin, meat and smoked fish. Stir till well incorporated and allow to cook/fry for 5 minutes on low heat.
  • Add in par-boiled rice, stir till everything is well incorporated, add in a little water, diced onions stir again and allow to steam for 5 – 10 mins .
  • Heat up some cooking oil in a pan, a quantity enough for deep frying. Once hot, add in plantains and fry till its all golden brown
  • Serve native rice alongside fried plantains and ENJOY!

SOUPER JOLLOF RICE

INGREDIENTS

 

INSTRUCTIONS

  • Boil some water in a pot, add in rice and cook till almost soft without adding salt or anything. Set aside and drain excess water using a sieve if any.
  • In a casserole dish, pour  in “ Its Souper Ready To Eat Sauce “, tomato paste/puree, salt, chicken seasoning, diced onions, and stir till everything is well incorporated.
  • Add in par boiled rice, bay leaves, some water, stir and cover with a foil paper/baking sheet. Place in oven and bake for 10 – 15 minutes.
  • Once time is up, bring out jollof rice, stir till all ingredients are well incorporated.
  • Serve with any protein of choice and Enjoy!.

CHICKEN JOLLOF RICE

INGREDIENTS

INSTRUCTION

  • Chop onions and veggies and set aside.
  • Pour in chicken, chicken seasoning, salt, a little diced onion, curry, some water and cover. Bring to boil/simmer for 10-15 minute. Once done, set aside in a strainer to drain out excess water.
  • In a pot, heat up some cooking oil, add in cooked chicken and fry till golden brown, then set aside.
  • Once chicken is out, in the same pot, add in diced onions and fry till slightly brown, add in tomato paste/puree and fry till pebbly or for 3-5 minutes on low heat.
  • Add in blend pepper mixture, chicken stock, thyme, rosemary, curry, seasoning, bay leaves and stir. Bring to simmer on medium heat for 20-25 minutes.
  • Once simmered, taste for any adjustment if any is needed (you may add anything you feel is missing) . Add some water and allow to boil over, add in washed rice and cover with foil paper, allow to cook on medium heat.
  • While this is getting done, in a frying pan, add some cooking butter, chopped onions, chopped carrots and bell peppers. Stir-fry for 3-5 minutes on low heat and set aside.
  • Once Jollof rice is done, stir properly, add in stir-fried veggies, spring onions, chicken and stir still all ingredients are well incorporated. Your Meal is READY!
  • Serve and Enjoy!.
